Alaskan Coho Salmon Offers Chefs a Chance to Expand Low Fat Meal Options

Although their sizes obviously vary, in some parts of Alaskan waters, they can reach weights in excess of 15 pounds. They also feature a beautiful metallic sheen. Many chefs use them to create some of the best, low fat, nutritious table fare in the world. “How low fat?”, you may ask. According to most sources, each 3 ounce portion contains a mere 3.7 grams. The same portion is also said to contain 900 grams of omega-3 fatty acids. That essentially makes them one of the least fatty species of salmon on the entire planet. That said, here are three ways to enjoy them this week:

Alaskan Coho Salmon Dish #1 - Poached

Because they are so low in fat and high in omega-3s, you may want to think about poaching our fresh Alaskan Coho salmon filets. That way, you can keep your meal low sodium too. If you do decide to poach the Alaskan Coho salmon, consider serving it with a salsa made with cool season vegetables and herbs. Excellent options include kale and roasted beets.

Alaskan Coho Salmon Dish #2 - Chowder

Another low fat meal to consider serving your family is Alaskan Coho salmon and vegetable chowder. It is typically made with chunks of flavorful salmon, wild mushrooms, Yukon gold potatoes, baby carrots, pearl onions and Brussels sprouts. However, it would also taste good with other vegetables like greens and Bok Choy. Just make a standard chowder base and then add the vegetables of your choice. Afterward, serve the salmon chowder with fresh baked, whole grain breads and a healthy salad.

Alaskan Coho Salmon Dish #3 = Patties

If you haven’t put the family grill away for the year just yet, you may want to form the Alaskan Coho salmon into patties instead. The patties taste incredible served between toasted whole wheat rolls. For an extra added punch, whip up a bowl full of low fat topping too. We’d suggest using 3 tablespoons of chives, ¾ cups of low fat salad dressing and 1 teaspoon of lemon juice to make the topping. It’s a flavorful combination that really seems to pair well with the salmon patties, fresh spinach leaves and tomato slices.
