For a perfect poached coho salmon, try this recipe:
Poached Coho Salmon
- 2 salmon fillets, 5 to 6 ounces each (or larger), skin on.
- 1 quart of water for poaching liquid
- 2 tsp of salt
- 2 Tbsp of wine vinegar
- Chopped dill or parsley to garnish (optional)
- Hollandaise sauce (optional)
1. Add water to a sauté pan and bring to a simmer.
2. Remove any pin bones left in your filet (unless it was already done by your fish monger).
3. Once simmering, add vinegar and salt to water, and set the salmon skin-side down into the liquid. Poach for about 7 minutes. 8 minutes if thick.
4. Once poached, remove from skillet. Allow filets to rest for a few minutes (on a paper towel if desired), plate, then add chopped dill or parsley and Hollandaise sauce. Serve and enjoy!
