In Polynesian, mahi-mahi means 'strong, strong.' Mahi-mahi is fully cooked when it reaches 137 degrees Fahrenheit internally. Properly cooked mahi-mahi is tender and flaky. It is an excellent source of fish oil, amino acids, and several vitamins (such as B-3, B-5, B-6, and B-12). The taste is mildly sweet, perfect for people who do not like overly fishy tasting fish.
