Ingredients:

  • 1 lb (approx. 450g) Tanner's Alaskan Seafood Raw Sockeye Salmon Roe

  • 1 tablespoon fine sea salt (adjust to taste)

  • 1 cup (240ml) cold filtered water

Equipment:

  • Fine-mesh sieve

  • Large bowl

  • Clean kitchen towels or paper towels

Instructions:

  1. Prepare the Roe: Gently rinse the raw Sockeye salmon roe under cold running water in a fine-mesh sieve. Be very careful not to burst the eggs.

  2. Separate the Skein: The roe comes in a membrane called a "skein." Carefully and gently rub the roe against the fine-mesh sieve (or use your fingers) to separate the individual eggs from the membrane. The eggs will fall through the sieve into the bowl below. Discard the membrane.

  3. Salt Brine: In the large bowl, combine the cold filtered water and sea salt. Stir until the salt is fully dissolved.

  4. Brine the Roe: Gently add the separated roe to the salt brine. Let it sit in the brine for 5-10 minutes. The longer it sits, the saltier your caviar will be, so taste after 5 minutes and adjust to your preference.

  5. Drain and Dry: Pour the roe and brine back into the fine-mesh sieve to drain thoroughly. Gently spread the caviar on clean kitchen towels or paper towels to absorb any excess moisture. This step is crucial for good texture and shelf life.

  6. Store: Once the caviar is relatively dry, carefully transfer it to a clean, airtight glass jar. Store in the coldest part of your refrigerator.
